Not So Dirty Rice

Since listening to my body and cutting out all  Nightshades, I’ve really started to miss spicy food. scotchbonnet and harbenero  peppers are my fav!! But unfortunately they cause my lupus to flare sigh.

One meal I liked making a lot was dirty rice. Traditionally  made using Cajun spices but unfortunately that is not an option Since Cajun spices include ground peppers. So I made a nightshadefree version, that’s full of flavour and simple to make.


Total time: 35 minutes 

Yeilds: 3-4 servings


1 cup basmati rice (uncooked)

250g coriander

1/2 a lemon

1/2 tsp course black pepper

2/3 tsp cumin

1/3 tsp fresh dill

1 medium onion finely chopped

1 large clove of garlic finely chopped

1 courgette (zucchini)

olive oil

1 cup of veg stock

1/3 cup water




Heat 1 Tbs of  olive oil in a pot on a medium to low heat. Add the onion and garlic to the pot and sauté for 3 minutes.

Slice the courgette into 11/2 cm slices, then slices each slice into 4.  add the courgette, black pepper, dill, cumin to the pot. continue to sautee until the onion is transparent.

Wash the rice thoroughly then add to the rice, a lemon juice  & coriander into the the pot & sautee for a further minute.

Pour in the stock and water & Stir the ingredients together. place a piece of foil over the top of the pot then place the lid on top. Turn down the heat to low and leave to cook for 20-25 minutes or until the rice is cooked.
