Apricot and peach crumble 

An easy & comforting summer recipe full of juicy peaches and sweet apricots. A fruit pudding that won’t leave you feeling guilty.

yeilds: 4- 5 servings 

Total time: 25 minutes 


1 1/2 cup Peach slices

1 1/2 cup Apricot slices 

1 tsp Cinnamon 

1/3 cup Honey

1/12 cup Ground Almonds 

1 Tsp  Vanilla 

3 Tbs  Coconut oil (solid)  or Butter

1 Tsp Tapioca flour 

1 Tbs Coconut sugar optional 


Pre heat oven to gas Mark 3 

Add the ground almonds, coconut oil, vanilla (coconut sugar is optional)  to a bowl. Using your finger tips rub the mixture together until it looks like moist bread crumbs. Place aside until needed. 

 Using your Heat a pan on medium heat. Add the sliced peaches & Apricots, honey, cinnamon and tapioca flour. Stir together and heat for 3-4 minutes or until it has thickened. Stir occasionally making sure the fruit it counted in the honey . Once thickened add to thr fruit to a baking dish.

Sprinkle the crumble over the fruit and bake for 20 minutes or until the crumble has browned.
