Bowl of goodness: #1 sweet potato and peas Bites, Garlic Cauliflower Mash and Roasted vegetables.

Decided each week I’m going to share 2 of my lunch bowl recipes. I know I need to stay more consistent when it comes to posting on here and this will hopefully be the solution. So first up is this lovely bowl of sweet potato and Pea Bites, Garlic Cauliflower Mash and Roasted Vegetables. I had this for lunch today and I had to share it! 


Makes: 1 serving 

Total time: 50 minutes 

Ingredients:

250G Brussels Sprouts  peeled & Trimmed 

1 Carrot Peeled & trimmed

1 Cup small Sweet Potato mashed 

2/3 Cup Petits Pois cooked 

2 Garlic Cloves Crushed 

1 Tbs Olive Oil 

1 Small Cauliflower 

1 Leek 

40g Cheese Mature Cheddar 

3Tbs Coconut Oil melted

1 1/2 Tbs Almond Milk 

1Tsp Cinnamon 

1/2 tsp Ground Ginger 

Pinch Salt optional   

Black Pepper 
Cauliflower Mash 

Preheat oven to gas Mark 4.

 To a medium sized  bowl add 1/2 of the crushed  garlic  and 1 tbs of olive oil, (small pinch of salt optional) and black pepper . Stir together and set aside. Remove the stem from the cauliflower and cut into florets wash and pat dry with a kitchen tissue.

 Place the cauliflower in the bowl with the seasoning and mix so that the cauliflower is coated. Place on lined baking tray and roast for 20 minutes or until the cauliflower is soft and lightly browned. ( make sure to turn over the cauliflower half way through) 

Take it out of the over and place it in a food processor. Add 1 1/2Tbs of almond milk and Blend until smooth. Taste and adjust seasoning if needed. 

Roast Vegetables 

Preheat oven to gas mark 5

Trim the leeks  and slice into 6 pieces 

Place the Leek, carrot and Brussel sprouts in a baking Tray. Drizzle the coconut over the vegetables and shake the tray to make sure they are coated. Season with cinnamon, black pepper, ginger and the rest of the garlic. Shake the tray again. 

Place In the oven For 40 minutes turning them  half way through or until they are as crispy as you would like.

Sweet Potato and Pea Bites 

Preheat oven to Gas Mark 5

To a mixing  bowl add the sweet potato, peas grated cheese, black pepper, pinch of salt &  and mix together so all if combined. Try not to mash the peas.

Line a baking tray. Using a Table spoon scoop out some of the mixture and place it on the baking tray mould with spoon and repeat. Keep going until you have 12. 

Place the baking try in the oven and bake for 40 minutes turning halfway through. Be gentle turning them. 

Once both sides have lightly browned remove from the oven. 

Now it’s time to plate up
