Loaded Sweet Potato Fries 

Who doesn’t like Loaded fries?  I am all here for some comfort food. Especially if it has a healthy twist. I’ve been seeing loaded fries a lot on Instagram but alway the same plate of chips, beef and cheese. As lovely as that was when I ate meat , it no longer has the same attraction to me now. Since I don’t eat diary nor meat I wanted to create something just as satisfying. I’m using Sweet potato because I am in tolerant to white potato and i personally think it goes better with salmon. But feel free to try this recipe with white potato. 
  Total time: 30 minutes                 

 Sweet Potato Fries


1 Large Sweet Potato

¼ Tsp Onion Powder

1½ Tbs Melted Coconut Oil

1/3 Cumin

Small pinch of salt (Optional)

Pinch of black pepper 


Pre heat oven on Gas Mark 5

Either wash or wash & peel a large sweet potato. Cut the sweet potato length ways into slices ½ Inch wide . Take a slice and cut it lengthways again ½ Inch wide . Continue until u have cut each slice. Place fries in bowl add all the oil & seasoning. Toss until all fries are coated. Place on fries on baking tray & bake for 25 or until the fries have browned. Turn them over half way through. 

                                                                                                                                         Turmeric Salmon


1 fillet Salmon

¼ tsp Turmeric

1/3 black pepper

1/3 Cumin

1 Tbs Lemon Juice

1/3 Ginger


Preheat grill on medium to high heat.​

Wash salmon & then pat dry with kitchen tissue. Sprinkle all seasoning over the salmon. Gently massage the seasoning in. Turn down the Grill to Medium Heat. Place the salmon under the grill skin side up for 5 Minutes. Turn it over, pour the lemon juice over the salmon and continue to grill for a further 10-12 minutes or until it has lightly browned and cooked all the way through. Once done place on a plate, using a fork flake the salmon and set aside.

                                                                                                                                                 Seasoned Avocado


½ avocado

½ lime

Large pinch black pepper

Small pinch salt


To a bowl take the flesh of ½ an avocado and mash with a fork. Season the avocado with salt, black pepper and lime. Give it a good mix and place in the fridge until its needed.


                                                                                                                                                 Peanut Sauce


2 Tbs Peanut Butter

½ Lime

1 Tbs Tamari

Pinch of black pepper

1/3 ginger

1/3 garlic powder

1/3 cup water  


To a blender or food processor add all the ingredients except the half of the water and blend until all is combined. Slowly add the rest of the water until it reaches a consistency of your liking. Adjust seasoning if needed.


Additional topping

Crushed Pistachios, 2 sliced spring onions & Coriander.

Now it’s time to plate up.
