One pot Turmeric and Coconut rice 

I shared this recipe a couple months back on Instagram so i thought I would post it on here as well. As usual another simple meal.  If you follow me on Instagram you would have seen that I am currently obsessed with turmeric! I sprinkle it on EVERYTHING!  I absolutely love the stuff. It tastes great in food or in a drink and has a number of  benenfits one being it  Can help to reduce inflammation. So of course I had to include it in this meal.  I  💖 one pot meals simply because they are quick and extremely convenient. If you have never tried to cook a one pot meal just know it is a game changer in the kitchen. Who doesn’t want to spend less time cooking and more time eating. 

Total time: 25

Makes: 2-3 Servings 


1 cup uncooked Rice 

2/3 Coconut Milk

1cup water 

400g ( soaked and cooked or  1 can ) Kidney Beans 

1tsp Vegan Bouillon powder

1 1/2 heaped tsp Turmeric

1/2 Black Pepper 

Small pinch Himalayan Salt

1/3 tsp Cumin 

2 springs Rosemary 

8-10  Mushrooms ( Sliced)

2 Carrots (Diced) 


To a pot add all the ingredients and place on a medium to low heat  with the lid on for 25 minutes or until there is practically no liquid left. Turn off the heat and leave to sit for 10 minutes.

Serve and enjoy

    Hi! Discovering your blog thanks to Jack (Pepsfreefromkitchen). This recipe sounds really good, but I have a question: do the soaked red beans (so, as I understand, uncooked, as opposed to canned beans) get cooked through in only 25 minutes?
