Gluten- Free Banana Bread 

I absolutely love Banana Bread. But I find whenever I purchase it for on a shop or restaurant it is always filled with LOADS of refined sugar. Which is quite annoying as I don’t think it’s needed. so I decided to create my own  Gluten free low Sugar Banana Bread. This is a great on the go snack, can enjoyed as a desert or breakfasts with some yoghurt and fruit. 

Makes: 9 servings 

Total time: 40- 60

Ingredients:

1/4 Cup  Almond Milk

1 Cup GF Oats 

1 Cup Mashed Banana 

2 beaten Eggs 

1 Tbs Gf Baking Powder 

1 Cup Ground Almonds 

3 Tbs Beloved Date Nectar

1/3 Melted Virgin Coconut Oil

Pinch Himalayan Salt

1Tsp Vanilla Extract 

Method:

Preheat oven to Gas Mark 4 

To a bowl add all the dry ingredients and give it a good mix.  Then add the mashed banana, date nectar, beaten eggs and vanilla. Mix until all is combined. Add the coconut oil and milk and continue mixing. 

Grease a loaf pan. Then pour the mix into it. Place in the oven for 50-60 minutes until risen and golden brown. Test to see if it’s cooked by  inserting knife or skewer if it comes out clean take out of the oven and allow to cool. 

Once completely cool slice and serve .
