Coconut Prawn Curry

Anti-inflammatory curry in a hurry . Flavoursome comfort food and best of all it is Nightshade free. 



Makes : 2 servings 

Total Time : 20 minutes 

Ingredients 

250g prawns washed and deveined 

1 tsp Turmeric 

1 tsp + 1/2 tsp Cumin 

1 tsp Ginger 

1 tsp Dried Coriander leaf 

1/2 tsp Cinnamon 

1/2 tsp Ground Black Pepper 

1/3 tsp Ground Cardamon 

Pinch Himalayan salt 

1 can Coconut milk 

1/3 Cup of veg stock 

1/3 Onion

Oil of your choice 

Method:

To a bowl add the washed prawns. Season with 1/2 tsp cumin and a pinch of Himalayan salt. To a separate bowl add the rest of the spices and mix well. Take a 1 1/2 tsp of the spice mix and add to the prawns cover and place in the fridge to marinate for 15 minutes. 

In a frying pan add a drizzle of oil and sauté the onion. Once the onion is transparent turn down the heat, add the coconut milk, veg stock and spices. Mix well and  Bring to a simmer than turn down to lowest heat allow to cook for 15. 

Add the prawns and Continue to cook until the prawns are pink and are cooked through.

Serve with a grain of your choice.
